I see, quite strange design. The only way to deal with it, as I see it, is to use something like MIDI-OX to filter and modify Note On messages from the piezo zone based on MIDI velocity.

True but it is possible to wire another input to the piezo and restrict the velocity curves.

I reckon this should work.

I think I have 4 wired this way. I don’t use them because it's easier to do a different way but I can confirm it does work.
There is probably a pre made splitter around that will do the job.
