If I understood well, Megadrum has 15 dual inputs and 2 single inputs (kick and Hihat pedal)

Hmmm... Can I build it so that it has 8 single inputs and 12 dual piezo/piezo switch inputs? Essentially, this is what I would want:

Single Piezo Inputs:
1) Kick
2) Highhat pedal
3) Tom1
4) Tom2
5) Tom 3
6) Splash Cymbal
7) Aux 1

Dual Piezo/Piezo Switch
1) Hihat
2) Snare
3) Crash 1
4) Crash 2
5) Ride
6) Aux 2
7) Aux 3
8) Aux 4
9) Aux 5
10) Aux 6
11) Aux 7
12) Aux 8

According to the 32 input all in one PCB, would I be able to achieve this?

You can have 12 dual inputs and 7 single inputs plus a HiHat pedal input or
13 dual, 5 single plus a pedal input
11 dual, 9 single ...
14 dual, 3 single ...
10 dual, 11 single ...
and so on

I'm sure you get the idea.

Okay, so I understand we can separate the dual inputs as two separate inputs.
1) So, if I wanted to split one of the dual zone inputs as two separate single zones, how am I supposed to wire it? I'm asking specifically about the 32 input all-in-one kit. I have taken a look at this schematic, http://www.megadrum.info/img/megadruminput.pngbut I don't totally get how it's supposed to be wired to the TRS jack.
2) For the dual zone inputs, how is it supposed to be wired to the TRS jack?

You can wire Head/Bow and Rim/Edge on the same jack or in two different jack ... as you wish ...

If I use connectors 7 and 8 for two different jacks (example, tom 1 and tom 2) will I be able to signal both piezo signals at the same time to megadrum, or would only one of the sounds come out?

Each input provides an independent MIDI signal ...
After, you can affect what you want on this MIDI signal

Drum sensor Head(Bow) Dual Head.
Yes – Dual Head drum pad (piezo/piezo or
piezo/switch)
No – Central and Edge channels are separate and
can be used as individual pads.
Drum sensor Rim(Edge) Type.
Piezo – piezo sensor
Switch – switch sensor. Can only be set for a
dual heads and only for those with piezo/switch
sensors.
