so looking at the midi log, I mad a few slight changes to threshold on rim/edge. This is as close as I've been able to get to having some sort of separation, but I can't hit the snare too hard or it triggers the rim sound.
So, the first hit was the head lightly, next hit was hard(which triggered the rim sound), 3rd was me grabbing the rim which gave a (choke), next hit was hitting the rim, next hit was hitting the head hard, last hit was hitting the head somewhat lighter than normal

I'm still not seeing any of the other Bnotes etc that are displayed in the documentation

There should be a threshold value close to where you are at, where that doesn't happen and separation works good. Try with lower or higher gain.
If it ain't broken... fix it until it is.

Is this with Threshold 17 as in the screenshot? So with Threshold 16 you cannot trigger rim at all and with Threshold 17 you get false rim triggering when hitting the head?

I'm still not seeing any of the other Bnotes etc that are displayed in the documentation

Is it a a dual zone pad or a 3 zone pad? All BNotes are the 3rd zone only.

this is with the settings in this recent screenshot. The pad is a Roland PD-9, I'm assuming it's a 2 zone pad. That being said, I have the head set to snare and the edge set to a crash cymbal, and if I squeeze the rim it will choke the cymbal hit. Could this pad possibly be a 3-zone? and if so do I need to select the Roland 3 zone option on the head?
Regardless, I still don't see any Bnote parameters, with or without 3rd zone enabled.

I'm pretty sure all Roland rubber piezo/switch pads a re dual zone only, unless somebody proves me wrong.

Do you see the "3rd zone" pane in the settings screenshot you posted? Do you see Notes, AltNote and PressrollNote there? As per https://www.megadrum.info/content/pads-settings these are BNote, ABNote and PBNote:

3rd zone alternating note. If it is different from BNote then the note values will be alternating between BNote and ABNote for every hit. By default it is equal to BNote.

3rd zone's note for "pressrolls". If a "pressroll" is detected then the note values will be taken from PBNote rather than from BNote/ABNote. See also PressRoll Time in Miscellaneous settings.

I'm not really sure how I can explain it any other way.

correct Dmitri, at 16 it doesn't trigger the rim, at 17 it triggers the rim, but also triggers the rim if I hit the head hard, not super hard, but a normal hard snare hit.
I will continue to play with gain/threshold and see if I find any sweet spot.

Also with this current setting, I can choke the crash assigned to the rim by squeezing the rim.

Does it produce an aftertouch On/Off when you press/release the rim switch Threshold below 16? At which Threshold you can no longer get aftertouch On/Off when pressing/releasing the switch?
Can you measure resistance between the sleeve and the ring when you press the switch?
Can you test it in a different jack, say in on of Aux jacks (to exclude a problem on the rim (ring) input of the snare jack)? Is the problem the same in the other jack?

Just in case, I re-did the test with a Yamaha TP80S dual zone piezo/switch pad which looks pretty much the same as PD-8. With Gain set to 4 and with Threshold on the edge set below ~20 the separation between the head and rim hits is perfect. This is because the rim switch has no resistors and pressing the the rim switch shortens the edge input to ground and as a result setting signal level on the edge input almost to zero. Don't see why it should be any different with PD-8.
