Interesting- Checking the 'same note' box in 'Head/bow' section didn't change anything, checking it for the 'rim/edge' section made the zeros turn from rim hits to head hits. Then I hit 'disable others' and the problem went away. Hit 'enable others' and the zeros are still gone.
Question, why is there a 'rim/edge' section even available when I have the head section set to 'single pieizo'?

well that's just the nature of the interface. It gives you 2 single zone or 1 dual zone. It saves a lot of time if you have lots of pads.

You might have to flick 'note' up and then down to get it to activate. I had this problem earlier.

koby drums - Triggera krigg/Bix - megadrum - Kontakt........... Samples from all and sundry.

You might have 2 separate pads (each with a piezo) going into 1 stereo input. This setting tells the module to treat them as separate pads and not as 2 zones of a single pad. I have 2 toms going into 1 stereo input and the floor tom and kick going into another - saves wasting stereo inputs on single zone pads.
If it ain't broken... fix it until it is.

Ahhh that makes perfect sense then.

Well guys, just want to thank you for helping me. I just figured out what my problem was and I'm thrilled! The snare I'm using is aluminum so it was always making a 'ping' noise with each strike. It just occurred to me that maybe if I dampen it it will trigger better. So, I slapped 2 moon gels on the mesh head near the rim. Perfection. I can not describe how great it feels to play this thing, although I don't have to because you guys surely know already. Expect some good video of my kit in the coming weeks. :D

Dmitri if you want me to mess around with anything to try and figure out why the zeros were bugging out, just let me know.

You first must check 'Linked to Note' for both Alt Note and Pressroll Note before making changes to Note. This way both Alt Note and Pressroll Note will follow any changes in Note. Or, just as airflamesred mentioned, if you checked 'Linked to Note' after changing Note, just flick Note up and down to force these notes to get in sync with Note.

Okay I will do that if it happens again. One more thing. Is there any way I can use the stereo cables with a single zone trigger, or do I have to buy all new cables? I realize they are dirt cheap, I'm just wondering.

Yes, you can. Just disable the unused input by setting its Note to 0.
