I tested the configuration, there is a little improvement, i also lowered the threshold to about 15-20, but still the feeling is not right.

The main problem must be the construction of the pads.
This is a sketch of how this "sadwitch" pad is made. I think it's very thick for piezo to receive small pressure, so if you hit it very softly, no sound produced.
