I can not find R 6.2k, 6.8k change in the future?
and found no inductor 1mH, can not be done?

You can replace it with 6.8k. Gain range will be slightly smaller.

It is 1uH in fact but you can use anything between 1uH and 1mH.

What happens if you use the 4051 without the BAT85s ? Or use another more common like 1N4148 ?

Yes you can, but it is useless.
4851 = 4051 with bat85.
