Is the 20080720 firmware, the latest one for v2.7 PCB?

No, it's the 20081020.

I found the folder, I uncompressed it and now I can see it contains .hex and .syx files.

Having a Atmega32-16pu, do I need to install :

- "megadrum32_16_32_20081020"
or
- "megadrum32_16_20081020"
or
- both
or
- The entire folder containing 13 different hex+ 13 sys files ?

And final question, having a Mac, I cant run Winpic800. How exactly do I update the firmware via my USB cable?

megadrum32_16_32_20081020 if it is not overclocked (i.e. you are using 16MHz crystal with Atmega). If it is overclocked, i.e. you are using 20MHz crystal with Atmega, I wash my hands of any issues you may encounter.

.hex files are for programming Atmega using a software programmer, e.g. WinPic800
.syx files are for upgrading Atmega firmware using a preprogrammed bootloader. Elrules's upcoming MegaDrum Configuration tool will be able to do it on Mac via USB.

There are 2 different crystals included in the All in one 2.7 kit.
One is 20Mhz the other is 12Mhz.

I guess we can conclude that mine is "overclocked"... and the fact that you "wash your hands of any issues I may encounter" is pretty scary!! I didn't choose anything! And I have no idea what "overclocked" means.

I just wanted to know exactly which .sys file I need in order to upgrade the firmware.

Now that we know I have an Atmega32 16pu and that the kit includes a 20Mhz crystal, should I be 100% sure I only need this file :
megadrum32_16_20081020.syx

 Don't promise that so quickly hehe. I have been able to enable the sending of big sysex messages in windows with an external opensource DLL library, but in Mac I don't know if it will allow to send big sysex files or it will fragment them as happened in windows built-in java midi implementation. Maybe there is another custom library Mac-specific.
I need to investigate more about that.

if you use a 20MHz crystal : megadrum32_20_32_20081020
if you use a 16MHz crystal : megadrum32_16_32_20081020
The 12MHz crystal is for the PIC 18F2550 (USB)

Atmega32-16PU is rated to run at maximum 16MHz. At 20MHz it may run fine or it can have all sorts of issues. Yours is overclocked.
I won't be able to help to solve any issues with overclocked Atmegas. I'm guessing you ordered the kit from Synthex so try to sort it out with him.

Either
megadrum32_20_32_20081020.syx if you keep your Atmega overclocked and beware of consequences.
or
megadrum32_16_32_20081020 if you replace your 20MHz crystal with a 16MHz crystal and it'll just work.

Syntex do you confirm? I mean, the board clearly shows a place where we have to solder a 20Mhz crystal. The "components list and pinouts" shows the exact same thing : I just had to use a 20Mhz crystal....

Est-ce qu'un de tes acheteurs a déjà eu des soucis à cause de ce crystal? Ou suis-je la première à soulever ce problème?? Que me conseilles-tu de faire?

About crystals and firmwares:

What happens if you have a 20mhz crystal and use the 16mhz firmware? This is my situation now, i've purchased a 20mhz based on synthex list but dmitri discourages it's use. Can I still use it with the 16mhz firmware? Or I must get another crytal at 16mhz ?
